Chicken, Broccoli and Cashew Stir Fry

Serves 2-4

2 boneless skinless chicken breast

2 tbsp avocado oil or butter

1" chunk ginger, grated or finely minced

5 garlic cloves, minced

½ tsp salt

¾ - 1 cup roasted cashews

2 cups broccoli florets

½ cup homemade chicken bone broth (or good quality storebought)

¼ cup coconut aminos

2 tbsp honey

 

  1. In a saute pan over medium high heat add avocado oil or butter. Add the minced garlic and ginger, stirring occasionally for 1 minute.
  2. Add the chicken and season with salt, stirring occasionally for 3-4 minutes until the chicken is no longer pink. Add the cashews and broccoli, stirring occasionally for 1 minute.
  3. Add the bone broth, coconut aminos and honey, stirring occasionally funtil the sauce has slightly thickened, the broccoli is tender and chicken is cooked through. This should take 5-8 minutes
  4. Remove from heat and allow to rest for a couple of minutes then serve immediately.

 

Coconut Aminos:

Coconut aminos is a slightly sweet gluten free and soy free sauce with  have 73% less sodium than soy sauce.

Typically, coconut aminos are used as a substitute for soy sauce in recipes. You can substitute soy sauce or tamari (tamari is a gluten-free option) if you prefer.
